We have a few cold-ish days this week after it's been warming up, but it's always a good time for chili.

I found another brand of Chorizo. I typically uncase it and then cook it with the ground meat separately over the stove then add it to the slow cooker. I left out the chicken this time, so I didn't cook it as long, 6 hours on low.

A smoked Mackerell mousse.

Mackerell, onion, jammed Lemon, Dill, Pickled Ginger, cream cheese. Blend it and *BOOM* an excellent spread or mousse for plating.

Combines marvelously with pickled Beetroots on a high hydratation sourdough.
