ApoCalypso saison

This saison is brewed with Pilsner malt and Kernza perennial grain, fermented with my Palatki wild yeast culture and then dry hopped with Calypso. Mildly tart and ridiculously fruity with a little underlying funk. I'm really happy with how this beer turned out.

I'm brewing the kernza beer this morning. I got started at 4am and I'm about to mash in now at 6. The kernza is way too small to go through my brewing mill, so I sent it through the flour mill at an extra coarse setting, which kinda worked. I'm not sure how much extract I'll get from this stuff, but I should still get the flavor according to a pro brewer I talked with about this.

Doing a taste comparison between the Deschutes Costco lager and their kernza (and rye) lager.

They're pretty similar and both quite tasty. The kernza has a slightly different flavor like a subtle grassiness that's not unpleasant and could even just be due to the hops. Obviously the kernza has some haze but that's not a big deal to me.

So now I guess I just gotta brew something with the kernza I bought.

Any suggestions on what style of beer to make with kernza as ~15% of the grain bill?

I was just going to use it along with pilsner malt for a saison, but if someone has a better idea, I'm listening.

My latest article for the local paper talks about #Kernza, a newish, processed grain derived from a perennial intermediate wheatgrass, and its use in brewing — specifically, in two new beers from #DeschutesBrewery, Kernza Lager and #NonAlcoholic Kernza Golden Brew. For the article I focused on the non-alcoholic brew, the first certified organic NA #beer in the country.
