Grapes looking better this year at the two rows the school is maintaining as part of the waiter education. I think it will take a few years more before the vines are vigorous enough to fill in the whole space of the row, but for the time being there will be fair harvest and in spite of almost non-stop clouds and rain in July and august, sweetness is already quite good. Rows are located at Copenhagen local winemaker Nordlund.

Yesterday at culinary school I made something I am really proud of. This is a kampachi crudo with cucumber, honeydew melon, chile-pickled beets and radishes, a honeydew herb emulsion, chive sprouts, and furikake.
