Roma, 3 mar. (Adnkronos) - “Il menù fisso ha il problema di fondo che crea disaffezione: il bambino subisce il pasto perché non ha la possibilità di scegliere. Si ritrova un primo, un secondo, un contorno che qualcun altro ha deciso. Questa disaffezione crea distanza". Lo ha detto Nicola Lamberti, Ceo di PlanEat, al convegno promosso da PlanEat 'Innovazione digitale e politiche pubbliche per la riduzione dello spreco alimentare nelle scuole' presso la sala Stampa della Camera dei Deputati. “C'è anche un altro problema legato alla quantità: in un contesto scolastico ci sono bisogni, abitudini e attività differenti che richiedono quantità diverse. Avere la possibilità di scegliere il pasto e la quantità è, secondo noi, il miglior strumento per lottare contro lo spreco alimentare a monte, evitando di produrre ciò che sarebbe certamente buttato.”
“Dal progetto pilota PlanEat Scuole, realizzato nella provincia di Pavia, sono emersi risultati concreti: ponendo la scelta del pasto in forma volontaria il giorno prima, il 98% degli alunni ha aderito ordinando quasi tutti i piatti disponibili. La possibilità di selezionare tipo e quantità del primo, del secondo e del contorno ha permesso di ridurre del 52% lo spreco dei piatti e di diminuire del 20% il cucinato, aumentando così la qualità del servizio. Per estendere il modello su larga scala, è necessario introdurre nei contratti e negli appalti strumenti digitali per la pianificazione, così da evitare l'esubero alimentare a monte”, conclude Lamberti.

Having the possibility to choose the meal and the quantity is, in our opinion, the best tool to fight food waste upstream, avoiding the production of what would certainly be thrown away.” “From the PlanEat Schools pilot project, carried out in the province of Pavia, concrete results emerged: by making the choice of the meal voluntary the day before, 98% of students enrolled by ordering almost all the available dishes. The ability to select the type and quantity of the first course, the second course, and the side dish has allowed a reduction of 52% in food waste and a decrease of 20% in cooked dishes, thus improving the quality of the service. To extend the model on a large scale, it is necessary to introduce digital tools into contracts and tenders for planning, in order to avoid food surpluses upstream,” concludes Lamberti.
