Today I made some apple cinnamon #bread to go along with my #homemade apple butter, and it came out spectacular. I just improvised the #recipe using my sandwich loaf recipe as a base, and I'm kinda surprised if came out so well.

The chocolate bread pudding went over much better than the failed-to-rise dense sourdough loaf. I used a recipe from King Arthur (https://www.kingarthurbaking.com/recipes/dark-chocolate-bread-pudding-recipe) but I cut the sugar down to 2/3 the amount. Next time I'll probably try even less sugar.

I am so grateful that this recipe gave everything in grams as well, as that made it much easier for me to scale it to the amount of bread cubes I had.

Dark Chocolate Bread Pudding

Dark chocolate bread pudding made from leftover bread (brioche is especially delicious). It uses a custard base made with cocoa and chopped chocolate for a creamy texture and rich chocolate flavor.

Also, I really love when I'm #baking and the bread looks like this when it's rising?

600g flour, 480g water (80% hydration), 10g salt, 10g sugar, 7g instant yeast.

Slap & fold, 3 times at 40 minute intervals. Final proof 1 hour in the very well oiled sheet tray in which it was baked at 220°C / 425°F for 35 minutes.
