#Today I had /planned/ to sleep in. For the first time this vacation cycle I didn't actually have to get up and take anybody anywhere.

So, naturally, I'm wide awake before 0700.

My wife was already out the door, to the store to pick up a few items. Coffee was made. ☕

I've done a load of dishes and have some #keto chocolate chip muffins in the oven.

At least we got all the kiddos presents wrapped yesterday.

Keto cheesecake follow-up (now that I’ve eaten some):

I need to increase the amount of liquid stevia. One teaspoon is not enough to substitute for 1.25 cups sweetener. I’ll probably go with 1.5 to 2 teaspoons next time.

As expected, it was a little too dense. You are supposed to pull it out of the oven when it is still jiggly in the middle, and I missed the timing because it baked so fast. Maybe some extra mixing time is also needed to get more air into the mix. Other ideas welcome!

I’ll save this one by adding a berry compote, which means it won’t be keto any more, but hey, it’s still cheesecake.

After reading some recent research about the effects of erythitol and other sugar alcohols on blood platelet “stickiness”, I thought I’d try my favourite keto cheesecake recipe using liquid stevia as the sweetener instead. (I used about a teaspoon of stevia to replace a cup of powdered sweetener). I knew there might be some knock-on effects, since sugar in a recipe can also have a structural role, and affects liquid retention.

The main thing I noticed is that the cheesecake seemed to be done baking after only 35 minutes, when it’s normally 45 to 50 minutes. (And the centre was already past the ‘jiggly’ phase when I pulled it out). It’s in the fridge now for overnight cooling — I’ll let you know tomorrow if it turned out okay. I might need to add some whipping cream or some other extra moisture next time.

White Bread Chaffle makes 2 chaffles
1 large egg
3 tbsp almond flour
1 tbsp sour cream OR mayo
1/4 tsp baking powder
1 tbsp warm water

1.Heat waffle iron.
2. Mix all ingredients together in a cup.
3. Spray the waffle iron with oil.
4. Pour 1/2 of batter into a waffle section and cook until steam stops coming from iron. Check to see if the chaffle is browned on both sides, flip if necessary.
5. Eat as bread or with #keto syrup.

Woke up super hungry today (very rare for me) so had an early supper.

I made cookies! There are such an ungodly number of things I can't eat that I'm surprised my ad hoc recipe worked so well. They're light and fluffy, mainly I think because of the extra fine almond flour I used. Just a simple spice cookie with oodles of butter.
