Been on Keto a little over 2 months now, and I'm happy to report I hit my first weight loss goal! Just weighed in this morning at 197lbs, which is 31lbs down from earlier this year. First goal was to lose 30lbs, eventual goal is to get down to 190lbs.

I feel like Keto worked well for me, but I'm going to start transitioning back towards a "normal" diet in mid June. Cardio exercise has become a lot easier after dropping this weight, so as long as I stay on top of that I don't think I'll put the weight back on - but I'm also willing to revisit the diet again if I start putting weight back on.

This really drives home something I already knew: health isn't a one-size-fits-all thing. I have friends who have lost weight with intermittent fasting and strictly vegan/vegetarian diets, but both left me with fatigue and concentration issues. I feel *great* on Keto (after 6 weeks I had a minor increase in cholesterol), but I know folks it hasn't worked for.

I'm shocked that the most famous german nutrition doc doesn't even cover the very basics of ketogenic nutrition. In fact, my expectation would be a lot higher: I figured that he'd give patients information that there are dietary options alongside medication for mental health conditions. "Controversial" doesn't mean "refuted"

So far, from ketoshop, the sandwich thins are the best like the rolls were from ketochefs.

The cookies are both meh, partly due to the coconut flour since I don’t love the taste. Also, one uses normal chocolate chips and the tiny bit of sugar is too much. The others are just bad in texture. And they’re both tiny.

The muffin is also small for £4 (by the time I got my first-order discount, it was free). The jam tastes bitter, sadly. And it’s possible erythritol isn’t doing me any favours anyway. Fun time out here, wasting time and money 😏

Chicken Broccoli Fritters
Makes 8 fritters

200 grams COOKED chicken, diced 1/2" cubes
100 grams Broccoli, diced 1/4" pieces
1/2 cup shredded cheese (mozz or cheddar)
1/2 tsp EACH of garlic powder, onion powder, paprika, and Italian seasoning
2 eggs well beaten.
Optional: diced red or green pepper, green onion.

1. Start by dicing the Broccoli and steaming it until fork tender. ( I microwave mine with 3 tbsp water for 4 mins and drain)
2. Line a baking sheet with parchment paper, set aside.
3. Meanwhile, add all other ingredients into a medium bowl. Add in the well drained broccoli and stir everything together so the egg coats everything.
4. Using a 1/2 cup measuring cup, scoop up the mixture and add to baking sheet. After you've added all the 8 scoops, you may need to form the fritters with your fingers so they don't touch.
5. Airfry at 400°F for 10 mins, checking to make sure the egg is completely cooked. (OVEN: 400°F for 15-17 mins.)
6. Remove from airfryer and allow to rest for 5 mins to firm up.
7. EAT!

This can also be made with ham or roast beef instead of chicken.
