Making some tsukemono this morning.
I love making pickles because they have a little staying power. Pickled mustard seeds are probably my fave, but tsukemono, especially shoyuzuke, run a close second. This recipe is great. I use the same formula to pickle all sorts of things. Just salt a lb/0.5kg of veggies, rinse and dry, then stir this up. Hopefully I will have these with some kakuni (braised pork belly tonight) but if the the spoons aren't there, this, some rice and an egg would be equally tasty!

With a firehose of snow coming down right now, and another foot headed our way, it felt like a good day for pastina.

I haven't had this in years because I could never find gluten free pasta small enough, but our butcher just started carrying GF orzo.

I don't know that this really needs a recipe, because it's more of a concept. I like mine a little thick like gruel or a wet risotto and I use butter instead of olive oil. You can adjust by increasing or lessening the amount of stock you use.

This is as easy as a box of KD. May you stay warm and fed in trying times.

Low spoon heaven. Add more garlic if you will it. Lemons are in season right now too. This is a regular at our house.
If you want a little protein cook some drained canned tuna, salmon or anchovies in with the garlic and lemon zest. For a vegan version use vegan butter or olive oil and some nooch or vegan parm, maybe some green peas for protein. Run some frozen peas under very hot water to defrost and toss in towards the end of tossing the pasta, just before the cheese.

Autumn is seriously here now. When it comes I start to crave sandwiches.

Sandwich of the day is:

Grilled smoked cheddar with shaved ham, onions, whiskey marmalade and hot mustard.

Why marmalade? Because it tastes a whole lot like Cumberland sauce. I spread both the marm and mustard on the ham side to hold it in place when I flip the grilled cheese.

The secret to a great grilled cheese is slow and low, so the cheese has time to melt and you don't burn the bread. Also, because of my ADHD I set a timer to remember to flip it, because sometimes I forget and wander off.
