Follow "liberally" it doesn't have to be forever, if you find out it's not a good fit, just unfollow.

Hallo zusammen,
ich bin auf der Suche nach einer Möglichkeit, Papier Dokumente einzuscannen, dann Daten daraus zu extrahieren und dann weiterzuverarbeiten. Das ganze am besten lokal auf meinem Linuxrechner, ohne Cloud.

Mein bisheriger Ansatz ist, einscannen und dann OCR drüberlaufen lassen. Dann hänge ich und habe keine Ahnung, wie es weitergehen kann. Habt ihr da Tipps, Artikel, HowTos oder ähnliches, mit denen ich weiterkomme?

@IceCubesApp also works nicely as macOS desktop app (Ventura required). It is great how you can customise the look and feel.
