"Zero Frying" Magic: Barley Pasta Tortino allo Zucchino!
A delicious Barley Pasta Timbale by Rummo with zucchini and a "crème brûlée" style vegan cheese crust. Super light method: instead of a classic sauté, we seasoned the pasta water with zucchini concassé, oil, garlic, salt, chili, rosemary, fennel seeds, and a spoonful of olive oil.
Once drained, we creamed (mantecato) it with vegan "parmagrano", plated it in a ring, and torched the top with smoked powder and smoked almonds.
No fried oil, super light and just pure flavor!
