I made phở today at home. A few learnings:

• veggies like Bok Choy should be added close to serving, because they will get soft if they sit in the broth too long
• Bean sprouts don't have a long shelf life.
• use the low sodium chicken stock
• the farmers market in MoHi has great Thai basil at the same stand that has the bok Choy
• cut the carrots thick, they also get soft in the broth
  I liked it but it was a LOT of work, especially on a weekday, and I'm not sure how great the leftovers will be.
