Hah. So, I read up on the Volkswagen 12V battery mystery before the car came into the shop - it seems there's an issue with the component that charges the 12V battery from the high voltage supply in some cars on this platform. When the service centre called, I thus questioned their estimate that all they would need to do would be to switch out the 12V and hand me back the car.
Today they told me to pick the car up, after having replaced the 12V. They _also_ scheduled a time where they need to take the car in for a two day "update" - without specifying further what that entails.
I have a guess. That component which is under recall* in the US but VW apparently don't want to talk too much about. If so, this problem is likely to happen in all early ID.7, besides the ID.4 and other cars on that platform.

I'm really happy with the Volkswagen ID.7. Except, yesterday it seems to have fully given up and started broadcasting some "ET phone home" codes before deciding that it was time to just shut off.
Now towed to the shop. When the 12V battery gave up in Nov it could've just been a random fluke. Second time around, most likely not.
