With weekly nudges, repeat requests, and encouragement from Jeanne, I finally took the leap and baked gluten-free baguettes! I had never made baguettes of any sort before, and I’ve got very limited experience with #GFbaking

Overall they were pretty good, and the labor was less about folding/kneading and more about waiting to fold the dough every 15 mins multiple times in an hour….

Worth the risk!

Rarely I bake. These are GF cheddar and green onion scones to eat with ham dinner. The flours are a mix of almond, millet, arrowroot and cassava.

I just cooked some custard biscuits - this recipe goes from way too dry to way too gluggy
in one step, and the resulting biscuits have an interesting texture you don't often encounter.

One day I'll dial it in properly. #GFBaking

Rising (gf) bread dough today and for the last couple weeks I've been using gluten-free yeast from Bob's Red Mill, a brand I normally love for grains and beans. However, the breads have been really small and hardly risen at all. Used Fleischman’s this morning and wow, huge difference! Everything is rising nicely!

Did I just get a dud bag from Bob's Red Mill or have others noticed this too?

The first Christmas after I was diagnosed with Celiac, I found this cookie recipe in Living Without Magazine (long since renamed Gluten Free and More). It is still the very best sugar cookie recipe I have ever made. Not too sweet, perfectly lemony. I bake for 7 minutes instead of 10.

Making banana bread for the first time in months and for the first time in this apartment (we moved in Aug).
