Rising (gf) bread dough today and for the last couple weeks I've been using gluten-free yeast from Bob's Red Mill, a brand I normally love for grains and beans. However, the breads have been really small and hardly risen at all. Used Fleischman’s this morning and wow, huge difference! Everything is rising nicely!

Did I just get a dud bag from Bob's Red Mill or have others noticed this too?

@hollie my first thought is: how old is the bob's yeast?
@mnemonica Brand new! I was so surprised. Best by date is Jan of 2024.

@hollie Looked it up - Bob’s is “active dry”, it must be rehydrated before use. The advantage of active dry is long keepability. Fleischmann’s comes in 2 versions, active dry and instant/rapid rise. The latter needs no special treatment, it can be added directly and is optimized to produce more CO2 right away. Possibly you are comparing active dry to instant/rapid?
