It turns out that trying to manage multiple full-screened Windows machines using RDP is a much nicer experience on a Mac than it is on Windows.

I can switch between full-screened machines using Mac desktops with keyboard or trackpad and I don't have issues with the host machine taskbar being drawn over the client machine.
