I haven’t been cooking a lot but on Thursday I’m visiting a friend and bringing homemade chicken salad on croissants, quinoa chips, strawberries and store-bought mini-muffin brownies because I don’t bake. 🙂
I made a Grilled Chicken Caesar salad for dinner tonight. I used the marinade from this recipe and grilled the chicken on medium-low flame. Very tender and juicy. Will have enough for 2-3 lunches too.
I’ve been MIA. The holidays were a whirlwind and we had three birthdays between Nov. 19th and Jan. 3rd. I’m on a salad kick for lunch (usually skip or snack) and am recreating some of my supermarket fav prepared salads. This is the Chef Salad I made today. I’m trying to prep about three to four days worth of salad so I don’t burn out. Delicious and less expensive.

Back on the soup train. I made cioppino using cod, scallops and shrimp. I am not a fennel expert so I watched a video on how to prepare. Turned out so tasty. 😊

Split Pea & Ham soup with Chicago Roll from grocery. My friend sent ham over and a recipe that was from a coworker who kinda wrote down generally what was in soup. 🤷🏻‍♀️
