I made a Grilled Chicken Caesar salad for dinner tonight. I used the marinade from this recipe and grilled the chicken on medium-low flame. Very tender and juicy. Will have enough for 2-3 lunches too.

I’ve been MIA. The holidays were a whirlwind and we had three birthdays between Nov. 19th and Jan. 3rd. I’m on a salad kick for lunch (usually skip or snack) and am recreating some of my supermarket fav prepared salads. This is the Chef Salad I made today. I’m trying to prep about three to four days worth of salad so I don’t burn out. Delicious and less expensive.

Back on the soup train. I made cioppino using cod, scallops and shrimp. I am not a fennel expert so I watched a video on how to prepare. Turned out so tasty. 😊

Split Pea & Ham soup with Chicago Roll from grocery. My friend sent ham over and a recipe that was from a coworker who kinda wrote down generally what was in soup. 🤷🏻‍♀️

This is happening today. I’m going to throw in some chopped ham near the end of the simmer that my friend sent over.

I thought I had found a “close to from scratch” green bean casserole recipe. I have liked this food blogger’s recipes in the past. Wow! Did I ever have to improvise on the fly!!

I made mashed potatoes from a recipe I had not tested previously. Wish me luck!

“Peppermint Party” is my first foray into knitting. This is garter stitch with crocheted ring embellishments. The embellishments add some weight to keep the ends in place. This is a birthday gift for my youngest daughter who lives in the frozen tundra of Tallahassee. Many mistakes were made so don’t look too closely.
