Today has been productive so far! Made probably 2-3 lbs of tahini in the morning (used the remaining amount of brown sesame seeds we had from the 5 lb bag) using the WonderMill, then made dough for carrot parathas in the afternoon (had enough whole wheat flour from a previous grind).

Wonder Junior Deluxe+ Grain Mill

Currently settled on a mostly Khorasan wheat "base" for homemade bread, along with:
* amaranth, teff, brown and red rice, tricolor quinoa, millet, buckwheat, sorghum, spelt, rye, and oat berries home-milled into multigrain flour
* flax, chia, sunflower, and pumpkin seeds turned into seed flour
* sesame and poppy seeds added whole

The overall formula is:

2/3 Khorasan flour
1/6 multigrain flour
1/6 seed flour

Multigrain bread topped with poppy seeds! Multigrain flour includes: millet, khorasan wheat, sorghum, buckwheat, brown and red rice, tricolor quinoa, and green and red lentils (home-milled using #wondermill). Followed the recipe in Peter Reinhart's Whole Grain Breads book for Multigrain Struan, using molasses for the sweetener, replacing oil with tahini, and using homemade (1:2 cashews:water) cashew milk.

Homemade chickpea flour (redux) and black bean flour! Made with the WonderMill Junior (hand-operated).

The only issue I've had is that sometimes the beans heat up and start gumming up the stone heads, so I loosen the second head and turn until the gunked up stuff comes out. Then I can break that part up by hand and feed it back to the mill. This definitely happens much more with chickpeas than black beans.

* Lentil flour and rice flour (used to make Ade Dose (ಅಡೆ ದೋಸೆ))
* Chickpea flour (used to make fritattas)
* Almond butter
* Peanut butter

We ordered the drill attachment so that we can make this kind of stuff with less effort in the future 😅

Homemade almond butter using the stainless steel burrs that came with the WonderMill Junior! We added 1/4 tsp salt to 1 lb of freshly roasted almonds and mixed before grinding (to ensure the salt was relatively evenly distributed). We got the almonds from the bulk section of the grocery store and roasted right before grinding (higher temperature makes it easier).
