Yay, I got the ok today from my stomach surgeon about my gastroparesis to have no diet restrictions! I just have to listen closely to my body on what food can be handled. That’ll be a bit tricky with my alexithymia.

Also, I now know I can see improvement until the end of the third month, and then it’ll be as good as it gets. Fingers still crossed that it is life changing in being able to largely eat whole food plant based meals! 😁

Reading Michael Greger's book on lowering LDL cholesterol. He recommends fresh/frozen artichokes in addition to the Daily Dozen of beans, nuts, greens, berries, etc.

There are so many delicious flavours on this plate that I am still enjoying them after it's all (sadly) finished.

Crispy air fried garlicky parsnip chips, yogurt crusted spicy tofu, sweet potato plus the most excellent fava beans in (lots of) garlic and tahini. Cauliflower and kale sprinkled with nutritional yeast are a great light addition to round off the plate.

Bon appétit! Plant foods for the win!
