Just baked. Serious ear! π€£
I thought it was going to be a dud because the bulk fermentation was turgid but it all changed in the proving.

With the cooler weather I finally get to bake some #sourdough in the main oven again without fighting the air conditioning. A few loaves are just finishing up. Pics momentarily.
My starters have been feeling neglected.
Soft-sh rolls from yesterday's bake.
About to be noshed with some soup.

The cinnamon raisin loaf.
Seems it needs considerably more cinnamon to make a conspicuous swirl but I'm not willing to dump in pounds of the stuff as American Youtube cooks seem prone to do. π€£ ππ½οΈπ
Okay, bread turns out much nicer if I keep a tray of water in the oven.
Maybe don't do it in a double boiler way next time, but I kinda like having the contrast, crunchy crust on top where it can go wild with the tearing, and soft on the bottom where it's all smooth.
In case there are #sourdough fans that don't have a bit of Carl yet, it's an 1847 starter resurrected in the 1990s, and you can get a bit for the cost of postage at this glorious ad-free '90s style webpageβ¦

Made my first attempt at home made bread courtesy of this recipe from One Dish Kitchen:

I haven't sliced into it yet to see how I did, but it smells lovely! I think it feels pretty dense, though, so I might have to work on ratios or something. We'll see!
