Aim was to add as little as possible of extra source of sugar to remain close enough to the original birch sap taste. I reduced the sap to reach enough sugar content to get 1 percent ABV (around 18g/liter).
I boiled it all, adding birch bark for extra tannin flavour.
I will ferment half wild (with a bit of extra fresh unboiled sap), and will add yeast for the other half. Still don't know if I will draw it from one of my wild yeast starters or just sprinkle a bit of commercial yeast.

I use dance as a medium for listening better. For me, it is a technology of porosity, contemplation and enchantment. Sometimes, this quality of movement is observed and experienced in unexpected places: in a protest, in a warm embrace, in the darkness of a nightclub, in the magic of singing together or when a fermentation crock bubbles like a jacuzzi in the kitchen.

Min weekendhøst. Jeg har besøgt den dejlige planteskole @[email protected] og havde lyst til at tage et 'snapshot' af deres lækre planter i starten af juni måned. Jeg kom hjem med bladfennikel, sødskærm, mynte, lodden løvefod og solbærblade (rabarber er bare blevet til en kompot). Jeg har brugt dem både til vilde gærstartere og til at samle dem i en stor krukke, som forhåbentlig kan nydes som en drik til sommersolhverv eller sommerferie. Hvis der ikke kommer bobler, er jeg klar til at bruge champagnegær. Jeg er ikke en purist og kan godt lide det hidsigt.
