Our university is married to Microsoft tools, but it does not mean that I have to.

Are there any FOSS alternatives that allow at least somewhat easy manuscript writing, editing and multiple people accessing the file at the same time?

If not, I can probably squeeze some project money for this, but not hundreds of euros/user/year (looking at you, Overleaf).
