

Am I the only person who puts cabbage in goulash? Is this a Rusyn thing? It's been years since I made it, but i know it by heart. I went to look at other recipes online and there isn't a cabbage in sight. The kind i make is maybe a bit more like a bigos with beef.
I grew up believing I had Hungarian roots.
It was only recently that I found out I was actually Lemko Rusyn, Galician Jew and Mongolian from Slovakia on that side. That being said, I grew up with a litany of Hungarian eats. One of which was lángos.
Co-opted as the ever loved beaver tail here in Canada, the kind I grew up with was never covered in sweet stuff. It's also super similar, if not almost the same thing as fry bread, though lángos is usually yeasted. To be honest, lángos might be my last meal if I ever had to choose.
I don't make them very often because I'm gluten intolerant and I haven't come up with a recipe that really hits the mark yet, but the kind I grew up with were covered in garlic and sour cream with a little paprika and reams of ovari cheese.
If you haven't had ovari, it's a beautiful nutty, tangy cheese that tastes a little bit like a cross between fontina and Parmesan.
This morning I had a jones and this will definitely become a regular.
This month I've been on a hash brown patty kick. So in the spirit of a very quick breakfast, I grated a clove of garlic into a couple big spoonfuls of thick Greek yogurt and seasoned it thoroughly with salt and pepper.
Then I thought about how much I love Çilber, a delicious Turkish yogurt and egg breakfast, so I soft fried and egg to go with it.
To plate I topped my air fried patties with egg, garlic yogurt and a generous portion of fresh grated parm, then a little sprinkle of Hungarian paprika.
There are no pictures because I literally inhaled it, and am fighting the urge not to make more.
This was so quick and so fulfilling. I highly recommend you give it a try!
