3 etti di farina tipo 2 grani antichi del Mugello più 7 etti di farina di farro integrale monococco macinata a pietra. 3-4 gr di lievito di birra fresco, semi di girasole nell'impasto, 20 ore di lievitazione, sulla superficie fiocchi di sale affumicato.
