Wine grape still carries molecular memory of its ancestry after 400 years, study finds

About 400 years ago, a cross between cabernet franc and sauvignon blanc gave birth to cabernet sauvignon. Today, cabernet sauvignon is the world's most-planted wine grape, dominating vineyards from Napa to Bordeaux. New research from the University of California, Davis, reveals that the grape still carries a kind of gene memory of its parents.

Prosecco Superiore DOCG on Instagram: "What is the Martinotti method? 🥂 This sparkling winemaking technique was invented by Federico Martinotti in 1895 and refined by fellow Italian enologist Tullio de Rosa. It’s used today to create Conegliano Valdobbiadene Prosecco Superiore DOCG. The steep terrain demands intense manual labor, especially at harvest, when Glera grapes are picked into small bins, sorted, and gently pressed. The juice ferments in a chilled stainless steel tank, a process that takes only a few weeks. The wine then moves to a second tank, called an autoclave, with fresh yeast and sugar or grape must to kick off a second natural fermentation. The autoclave traps carbon dioxide gas to create a fizzy wine with 5 bars of pressure. Most Prosecco Superiore ages for 40–60 days to develop complexity.
