Approx macros per serving: Calories: 860 kcal Protein: 55g Carbohydrates: 69g Fat: 41g (11.5g of saturated fat) Ingredients Salmon: 400g skinless wild salmon 1/4 tsp turmeric 1/2 tsp coriander 1/2 tsp cumin 1 tsp Kashmiri chili powder 1 tsp flaky sea salt 2 tsp each grated ginger and garlic 100g Greek yogurt Juice of 1/2 lemon Poha: 50g pawa (flattened rice) 200g baby new potatoes (diced) 1/2 red onion 1 green chili (finely chopped) 1/2 tsp turmeric 1 tsp each mustard and cumin seeds A few basil or 8 curry leaves 20g flaked almonds 30g sultanas 1 tbsp desiccated coconut Juice of 1/2 lemon 2 tbsp chopped fresh coriander Relish: 1 small white onion Juice of 1/2 lime 1 small red chili 2 tbsp fresh coriander (chopped) Pinch of sugar and salt Instructions 1. Marinate Salmon: Cut salmon into 4 portions. Mix spices, garlic, ginger, yogurt, and lemon juice. Coat fish and set aside. 2. Prepare Poha: Rinse pawa, drain for 10 mins, add to bowl with sugar and salt and mix with a fork. 3. Cook Potatoes & Almonds: Sauté diced potatoes until golden; set aside. Toast almonds in a dry pan; set aside. 4. Cook Poha Mixture: Sauté mustard, cumin seeds, curry leaves until mustard pops. Add onion, chili, sultanas, and potatoes. Remove from heat. 5. Cook Salmon: Fry salmon for 3 minutes per side on medium heat. 6. Finish Poha: Add poha, almonds, turmeric to pan, cover, and cook on low for 5 minutes. 7. Make Relish: Mix onion, chili, coriander, sugar, salt, and lime juice. 8. Serve: add lemon juice and coriander.
