Scrambled eggs of chorizo, green beans, cherry tomatoes & sharp cheese, served on cheap'n'nasty sourdough toast, with home-made #fermented cabbage, carrot & celery.
@Wyvernsridge Alas, I have none on-hand, but the paprika and chilli seem to make an acceptable replacement (if you don't mind a rather anemic end product).
🥬 1.4kg cabbage, finely shredded
🥬 1.2kg carrot, julienned
🥬 1.1kg celery, finely sliced
🥬 0.1kg spring onion, finely sliced
🥬 0.1kg elephant garlic, crushed
🧂 4Tbs tamari
🧂 4Tbs fish sauce
🧂 4Tbs smoked paprika
🧂 3Tbs sea salt
🧂 4tsp chilli flakes
🧂 1Tbs powdered whole lime
🥣 Stir until your shoulders burn
🏺 Put it in a large vessel with airlock

I found a sad, old ¼-#wombok (AKA #NapaCabbage, #ChineseCabbage) in the fridge this afternoon, and thought I'd better do something with it (other than throw it into the compost bin). Fortunately, I just happened to buy 1.5kg of ugly carrots yesterday...
Here's what I did:
Sliced wombok ~550g
Grated carrot ~400g
Chopped spring onion ~50g
Lime juice ~1 lime
Garlic ~3 cloves
White miso paste 1T*
Salt 2t**
Chilli flakes 1t

Spring onions ~half bunch
Anchovies in oil 100g
Fermented lime ~¼ cup
Fish sauce 3T
Chilli flakes 2T
Smoked paprika 2T
Salt 2T
Miso paste 1T
Garlic 6-8 small cloves
