Made Mom some stuffed #BitterMelon #soup for her breakfast. She's having it with some diabetic friendly rice. Mom needs to regain lost weight. We still don't have any clear diagnosis on why she's still experiencing on/off abdominal pains. I can't speak to her endocrinologist until October 28th. Her GP isn't sure what's happening. No answers = increased stress/anxiety. I'm really worried about Mom.
I'm returning to death doula work on a PT basis next Wednesday. I'm hoping Mom's doing much better by November so I can get back to FT.
Right now, Mom still needs extra help & I'm drowning in household bills.
I got 1 donation yesterday & we used it to buy Mom's vitamin supplements & a heating pad.

I looked it up. They’re edible. (just don’t eat too much at once ;)
So, I airFried them with a little canola oil spray. Now the house smells like a pâtisserie. Sweet n crunchy goodness. 😋

Found a couple of very ripe bittermelons 🧡
Et voilà, the airFried bittermelon fillets!! 😋
Inside of the green bittermelons, as I promised to photograph last week. I usually airFry them for 20 minutes. They’re delicious with ketchup or sriracha—although an acquired taste as they are a bit bitter. The high heat cooking reduces the bitterness. So, tempura would work. (but I don’t do deep-frying ;)
I’m sure y’all are so curious to see what it looks like inside of the ripe orange bittermelon, right? 👀😂
Now you’ve seen it! The seeds are encased in the bloody red gooey interior. Green ones don’t look remotely like this—I’ll take a pic next time I cut one.
Something came over to me to taste the red goo, and I did. To my utter surprise, it was sweet! Omg, a delicacy!! to me anyway yum 😋 lol
We got a very ripe bittermelon this evening! They turn orange right before the fruit explode like peeled banana. I got lucky that this small orange one was still intact. 🤗🧡
Thanks to the hot days, we’re harvesting more bittermelons than ever! Simplest way to cook them is to airFry them. They’re delicious with hot sauce and ketchup! 😋
