Will not starve this week. Dinner is vegan puttanesca sauce over wild rice mix (from 21-Day Plant- Based Challenge, UC Davis (2016), Persian Green Herbed Stew (from Silk Road Vegetarian ) ( with dill, spinach, and parsley for greens) still simmering with dark red kidney beans to be added. Whole wheat bread just done — amped with oatflakes, barley flour, sesame seeds and wheat germ.

Afghan moussaka with garlicky yogurt— adapted slightly to be vegan (plant based yogurt, no oil). Very tasty. I am loving this cookbook. There are a number with very similar names - but I can vouch for this one. #Vegan #PlantBased #VeganDinner
Brought a holiday spread to my 96 year old Mom in assisted living. Put Christmas music on CD and broke out the cider. She is covid quarantined. I was the one allowed visitor. I brought a Christmas tree week prior. She also had a prime rib plate. Loved her shiny stocking prezzies, and greatly approved of red box her main gift came in. Regaled me with tales of the great long ago. To all a good night!

Decent looking loaf, if I do say. Hi fiber : whole wheat/light rye/unbleached white/rolled oats/flax seed/barley/corn meal/gluten. Leavening included whole wheat poolish, as well as conventional. #Bread #BreadMachine #Zojirushi
