I made the complete jump almost two year's ago.
Had all the latest gadgets, iPhone 15 Pro Max, Airpods Pro 2.0, Apple Ultra 2 Watch and M2 MacBook Pro.
Just got totally sick of Apple's level of control over daily my life, it wasn't like that at the outset.
So, I sold the lot and bought;
A secondhand 2015 15" i7 MacBook Pro for A$250.00 and installed Linux Mint on it.
Also bought an analogue Citizen watch and dumped the headphones.
Finally, I bought a Google Pixel 8a and installed GrapheneOS.
In two year's I haven't signed into Google or Apple(never used Meta crap anyway) and I haven't looked back.
Admittedly the learning curve, across the board, was steep, but my needs are basic and I only had to do it for me, not a family.
Having said that though, there wasn't the level of urgency then that there is now either.
My conclusion is, I have no doubt it is a viable option to move from 'big tech' dependence to FOSS products.
You just have to stick with it.
