It's hard to beat a refreshing beer on a warm day, especially in October. I got some tidying up done in the yard today in preparation for the return of fall weather tomorrow. Zomerdijk Brewing & Blending - Vic (after the newborn and the hops used)

Lovely barnyard aroma, more funk than the label indicates, imo. Fruity, with yellow fruit and something exotic, too. Very potent bitters, but nothing the beer can't handle. Mild acidity. Beautiful dark yellow beer with a touch of pink and a stable head of foam.

In a masterclass, we learned all about blending wild ales, and how to construct a balanced yet complex beer based on mouthfeel, bitters and acidity. Quite the art!

We also compared the maturation of our single barrel wild ale with a similar project with different wort and age. Fascinating!

๐Ÿ‘๏ธ Chestnut, slight haze. Large bubbles, collapsing.
๐Ÿ‘… Acidic, but smooth. Dry. Sharper sour finish.

Nevel & Didko - Comfort Zone

Wild gose with tomato, red pepper and pink salt. The brewer went out of his comfort zone, hence the name.

Tomato, salt, umami. The sour and funk are still very present. The pepper is subtle and, contrary to what I'm used to, more present in the mouth than the throat. Bloody Mary, or Caprese with balsamic vinaigrette, salt and pepper. Definitely unique!

I'm sitting in my living room waiting for the weather to do something interesting (snow ๐Ÿคž) and enjoying this nice beer from funky fauna artisans ales of sisters Oregon. Forrestlike has some really nice cobbler vibes courtesy of the vanilla and cinnamon. This is a touch on the acidic side for me but still a very good beer I would absolutely buy again. #beer #wildale #beersofmastodon
