Tri-Tip turned our pretty perfect medium-rare. After smoking outside for an hour and a half at 225°, I brought it in for a reverse sear on cast-iron in butter, about four minutes a side. Then rested for 15 minutes before under a foil tent. Internal temperature after the rest hit 135°.

These green beans might be the best I’ve ever cooked. Didn’t include potatoes since we are cutting the carbs. #foodie #CookWithWes #tritip #bbqlife #backyardbbq
