Pressing the plums today. Gravity is at ~1.023 making it around 6% abv and if it goes to 1.000 it'll be 9.5% it will probably go below 1 though (unless the wild yeast gives out on me).

Right now it tastes pretty good with a nice balance of sweet and sour, so it will probably need to be back sweetened when it's done

I’ve never had plum wine before. I’m a red wine person with Merlot being my current favorite. This plum wine is sweet, but not too sweet. It fits that “Just Right” sweet wind category for me.
