I’ve sort of refined a recipe that makes pretty good pulled pork in an instant pot. It’s not 100% as good as a pork butt that’s actually been smoking all night, but it’s 90% as good for 10% of the work. I made my own NC-style BBQ sauce to go with it. #Pork #BBQ #NCBBQ

One of the best things about this is if you crisp the leftovers up in a skillet with some Tajin you can have carnitas-ish tacos the next night.

This list is Triangle heavy (makes sense since it's in a Raleigh newspaper), but still a great list of NC BBQ joints. Regardless of what the list says, Lexington BBQ in Lexington is hands-down the best on the list (at least for Western NC BBQ).
