First decoction done and adding back into the mash. The color difference is evidence of how this makes a difference. Not for everyone, but for me it is worth the long day.
My most recent Pilsner Urquell “clone” and finally got the ABV right as I’ve tweaked the malt quantity lower since I get such high efficiency out a triple decoction. Still not the color of the real PU. Their malt must be a bit darker or they really get a ton of Maillard reaction out of their decoction. I might add some Carahell next time.

Brewing a German Pilsner based on the Rothaus recipe published in Craft Beer & Brewing. Drinking the last batch of this beer currently and it is indeed a nice Pils and similar to what I’ve had out of the bottle. This time I’m using Hallertau Tradition and Tettnanger hops instead of Perle and Tettnanger. Also using the Augustiner yeast.
Single decoction
Here endeth my second batch of Vienna Lager (@akrennmair 1870 recipe). Will brew again as it is one of my favorite beers. When I finish up great beers like this I really miss my sabbatical. Would have already had another one lagering and nearly ready to tap.
@ambientspace do you know of any NZ brewers doing decoction?
Now that I’ve been brewing decoction lagers for over a year I’d really be keen to talk with someone who does this commercially or semi-commercially. When I go back to see my mom near Chicago I’m definitely arranging a brewery tour at Dovetail and Goldfinger.
Pilsner Urquell #2 today. Using the Weyermann Floor Malted. Already moving along more efficiently today compared to yesterday as I have a better sense of how my induction plate is heating. (Haven’t done this in a little while).
Look at the difference in color between the mash that was resting at 35°C and what went through the first decoction. This and the two hour boil make Urquell such a special beer to brew and to drink.

Decoction action making Pilsner Urquell #1 - with Weyermann Bohemian Pilsner Malt. Tomorrow is the same recipe but using the Floor Malted.
Long days with so many decoction steps and rests followed by a 2 hour boil. But tradition is worth it. The last time I made this (which was my first try) it turned out absolutely amazing.
