Excited that I found a semi-decent substitute for Tofurky Hickory Smoked Slices! My first "log" was a little chewy at the center. Next time, I'd likely roast it (oven method) longer and also use corn starch instead of tapioca (what I had on hand at the time).

Tapioca starch is amazing but it tends to result in "stretchy" more than "thick" textures.

Leave out the added salt in the recipe and add it yourself to taste afterward. Better for you and makes for a more versatile result!

Also, they're not half-bad pan-seared as a breakfast not-meat!
