Years ago, there was a bookstore/cafe in #ChapelHill called the Skylight Exchange. (IYKYK)

Their most beloved sandwich was the “African Tuna,” and after years of wondering, I finally came across a post on Facebook or Reddit, by someone who [purportedly] used to work there, with a recipe. I copypasted the text and promptly lost the link.

The recipe had no quantities, but tonight I finally got around to making a batch, and this at least gets in the general ballpark. And yes, nothing especially African about it :)

• 1 can tuna in water, drained
• 2 tsp olive oil (and yes, I reckon you could just as easily use tuna in oil and just not add this oil)
• 1 tsp lemon juice
• a good hefty grind of black pepper
• 4 tsp bruised garlic chili sauce — this is the secret weapon. It’s Taiwanese style and isn’t ultra spicy, although it has some heat. I got a jar at the Asian grocery and the name on the label was “bruiseised garlic chili” which is delightful.
• 1 tsp curry powder
• a couple of dashes of garlic powder (IMHO this is skippable)

If you ever had this at Skylight, you’ll remember it. However, I can’t make any claims for its accuracy, since it has been well over a decade.

I also think this recipe is ripe for variations, including swapping in whatever chili crisp you feel like using.
