Ai piedi del Castello di Yokote, situato sulla collina adiacente, si possono costruire piccole capanne di neve, per sorseggare del buonissimo #amazake insieme 😍

Se non avete le skills necessarie per costruirne una, no problema: si possono occupare quelle già preparate, con tutte le comodità.

I want a heating mat for growing #koji, and making #amazake. Any advice?

I have tried two different seedling mats, and they seem to have an internal thermostat, so they dont go above 35 °C or so. The amazake likes a cozy 55°C, so this is not enough. Will beer pads achieve these temps?

This morning, we harvested our first amazake made with our fermenter. We first made #koji in the Petri dishes and then convert it into this beautiful and delicious #amazake and into shio koji that is still fermenting at the moment. A new world is opening up! We celebrated it with a super breakfast of amazake, lacto-fermented plums, oat flakes and hemp powder. Umami delicious!
