Lidl have a load of Japanese foods in beyond their usual sushi box, and there's some nice vegan choices amongst them.

Tonight is Smörgåsbord a la 日本.

Necessity is the mother of invention.

Case in point, the mint in my hydroponics unit is growing like gang busters, and I had to figure out what to use it for beyond tea.

Invention: a quick and easy dessert consisting of a mashed banana, a tsp of cocoa, and a lot of leaves, all mixed together.

Tasted surprisingly ok.

Accidentally created a rather tasty tofu-based cheezy spread when trying to make tofu cheese for my pizza last night.
🧇Cube some extra firm tofu (I used Tofoo Naked Tofu - less liquid).
🧇Add to taste: A healthy scoop of Nutritional Yeast, plus garlic powder, onion powder, and herbs.
🧇Put ingredients in a hand blender, and blitz till well mixed and smoothish.
🧇Spread liberally on toast and enjoy😋
