I wanted to cook aubergines today but somehow I tricked myself, there were none in the fridge even though I was sure that I had bought them. 🤔 However I had sardines in sesame sauce (yum, all the way from Japan via kokorocares.com), king oyster mushrooms and Pak Choi, so there were possibilities.

I decided to do something similar to the aubergine dish with the mushrooms, I halved and fried them and then put a miso glaze and Shichimi Togarashi on top and grilled them in the oven - I thought they were very good. The Pak Choi got blanched and served with a leftover portion of the aromatic sauce that I like so much.

In addition I dug out another product I had in the cupboard (also from kokorocares.com), a black vinegar paste that we used as rice seasoning and my husband was really happy with that one.

Nasu Dengaku - Miso Glazed Eggplant

Make this traditional Japanese Nasu Dengaku recipe (broiled eggplant with miso glaze) in less than 15 minutes from start to finish!

We tried out a Wafu pasta dish from the Kokorocares.com website today. (Wafu pasta is western style pasta with a Japanese style sauce.)

I made a few little changes, I replaced the zucchini with languishing kohlrabi and May turnip from my fridge, added more olive oil to create a proper emulsion with the pasta water, and at the end also added a dollop of Spicy Chili Shiitake Miso to the sauce that already had plenty of “mushroom broth tea”powder in it.

It was all full of umami and we really loved it. My son also simply loves the pasta Mondays (that are really Meatless Mondays) ☺️

This was so simple, yet so satisfying: Japanese Somen (very thin wheat noodles) with pork belly and cabbage pieces fried in sesame oil. Seasoned with Dashi powder, pepper and salt. A few drops of Rayu (also called Layu, a chilli oil) make this perfect.

This must be one of the first Japanese recipes I tried when I started my food box subscription with Kokorocares.com in 2020. It convinced me then that Japanese food was for me and it still works for me today. 😊 At the time we were very careful with the Dashi as we were not used to its strong aroma. These days we can’t get enough of it.

The other day I stumbled across a video that showed how to get the bones out of a chicken drumstick relatively easily. As my guys hate meat with bones 🤷🏼 and I prefer the bits with bones because the meat is better, this seemed to be a good compromise to get the meat I like and for them to stop complaining about how cumbersome the bones are… 🙄 So in the end I had some nice flat drumstick meat with skin and decided to bake them in the oven seasoned and slathered with chilli jam. It took hardly any time for the oven thermometer to tell me that the chicken meat had reached the necessary temperature and I gave it another five as the other food items on the hob still needed finishing.

Our sides were Kiriboshi daikon coleslaw with Napa cabbage, mayonnaise and mango mustard; and an utterly delicious Pak Choi/mushroom salad.

All in all this was a success even if the chilli jam chicken didn’t match the Japanese side dishes that well. 😜

I was so glad when I realised that my latest seasonal Kokoro Care package contained a pack of Takana (pickled mustard greens). We’ve had this before and it makes for awesome egg fried rice!

To bump it up somewhat (we are three, the pack is for two) I added a yellow pepper and a deseeded green chilli. In addition I fried some chopped fresh radish leaves with garlic, they tasted almost like spinach.

The minced meat was apparently the favourite (Gochujang always works) but the Hijiki Seaweed also made an excellent impression too as it tasted quite meaty without a bit of meat in there. The stir-fry with soy sauce and oyster sauce was appreciated.

The chillies were an afterthought (as I have too many in the fridge) but just like yesterday this one bit me once I got to the seeds. No fun. 🤷🏼

No one in this house apart from me will eat octopus, so I’m having this two portion packet for octopus rice (that I got via my latest subscription box from Kokorocares.com) all to myself. The contents of the bag get cooked with the rice, easy peasy.

In addition I fried some carrot matchsticks and Padrón peppers, and made a small Napa cabbage salad with shio konbu (salted algae), katsuobushi (dry tuna flakes) and chirimen (mini fish), again all for myself. It was a good meal. ☺️

We tried Honey Pork Belly from Justonecookbook.com and as always we were not disappointed. Sweet and savoury is always a winner in my book. The whole meal came together very well and I also really liked the rice seasoning.
