Ethiopia is represented by Atakilt Wat (Ethiopian cabbage). I’ve yet to find a variation on cabbage with carrots, potatoes, and onions that was anything less than delicious! So comforting!

Today's dinner was inspired by Ethiopian & Moroccan food.

I took the cooking method and main ingredients of atakilt wat (a cabbage potato stew) and used a harira spice mix instead of the traditional ginger, turmeric and cumin, savoy cabbage from the #csa farm and sweet potatoes from the store.

Served with a vegan patty made a very tasty fusion dinner
