O...M...G! Y'all, this recipe is soooooo good. I only made 2 changes and they both worked: a hefty splash of white wine (I used NA cooking sherry) and chopped spinach (I didn't have enough peas). Also, the recipe recommends sprinkling more parm, do that!! I have been using their parm recipe for years, it's really good!

Do not even FUCKING bother with "2 cloves of garlic" in a recipe that serves six. If you are that afraid of garlic, just leave it out, ok?

How to chop a clove of garlic: start by peeling a whole head of garlic, then chop it all. Repeat with another head of garlic.
(luckily, recipes are mere inspiration for me if it is a flavour profile I am familiar with)
New Year's Eve is when I get to cook fancy (because I have the time) without complains (because no family other than @jan is around).

Für die Soße hab ich frischen Sellerie, Möhren, Zwiebeln und Knoblauch gewürfelt, scharf angebraten und dann noch etwas Tomatenmark mit angeröstet, mit 0.0er Rotwein abgelöscht und mit der Brühe, die ich von den Big Steaks über hatte, aufgefüllt Schön lang mit zwei Lorbeerblättern gekocht und dann ab durch die flotte Lotte .. hmmmm!
