The Wild Hunt

A couple of years ago I bought a #Roman cook book, based on Cato and #Apicius, but for various reasons I didn't really get to the point where I actually used it for anything. But I've decided it's time to subject my family to #ancient recipes. I am sure they'll love it. Kids love #authenticity.

Anyway, the first step is to cook a couple of wine-based sirups, here 'Defrutum' which is made by boiling wine and figs until its maple-syrup like.

Next up is 'Caroenum', which is a sweet white syrup, and finally the Roman fish sauce 'liquamen' which I'll make from Caroenum and some Vietnamese nuoc-mâm.
