Just for fun I wanted to try a high-hydration wholemeal-ish loaf, so 100% hydrated with a mix of very rough cut wholemeal, rye and a bit of strong white. Not a resounding success but the family loved its taste, which is the only thing that really matters.
After roasting the sugar smells like candyfloss and hisses as it’s added ladle by ladle into the softened fruit.
