The Exposition Universelle des Vins et Spiritueu museum in Île de Bendor France has an excellent collection of digitized books for bartenders. It includes one of the oldest known written guides to making Asturian sidra natural; The 1909 Manual de Cantinero by Carlos Golfrin.

EUVS Digital Collection – An Online, Searchable Library for the Bartending Profession

Gastronomía was a short lived anarchist magazine directed by Carlos Manini and published by the Catalan Gastronomic Syndicate of the CNT/FAI. Four issues were published between Sep and Nov 1937 in Barcelona.

It featured "Menús de guerra" such as "SOPA VEGETARIANA PARA 100 PERSONAS "

I have been telling people for a couple of years now that he is part of the future of Spanish cooking. I am so proud of what he has accomplished literally in his grandpa's barn.

I do actually write things occasionally. Finally publishing the first draft of a series of articles on the complex of soups in Asturias known collectively as Pote. It has an interesting history as the Sephardic Adafina became the Castillian olla podrida, which went north to Asturias and Galicia where it crossed withe the French cassoulet to become this whole set of soups and stews that now sort of define the cuisine of the north of Spain.
The travails of buying old farms, episode #324: It is impossible to replace any structural wood member with commercial dimensional lumber. All the joists in my barn that need replacing are 80x55mm. What do lumber yards stock?
