Just made the best lentil and potato soup, ever.
I did end up making a little meat stock but I needn't have.
Onions slowly braised on very low heat for an hour in cumin, Spanish smoked paprika and mild Kashmiri chilli. Carrots and potatoes lightly roasted in duck fat. Lentils, and toasted pearled barley. Combine and season. That's pretty much it.
What a rich set of flavours!
Serving with freshly baked homemade bread.
