Been here a few days, so it's time for the #Introduction. I'm a veteran #Sommelier (CSW, Dip ISG, Dip WSET) with two degrees in #AsianStudies and a thing for #owls. Fascinations include #Gardening, especially with #NativePlants, #RegenerativeViticulture, #wine, #winemaking, and all the disciplines and domains that touch wine. The flavor can do an interesting crescendo, and I don't know if the effect is cause by changing pH or changing temperature in the mouth.

The Wine Flaw of Our Times

Mousiness in natural wine is a flaw as pervasive as it is misunderstood in modern wine culture.

I counted 9 #mousy #wines among the hundred or so I tasted at the Temps des Copains expo in Nantes last June. Four were by one producer from Provence, and if I'd tried the rest of his wines, there might have been more.
#Mousiness manifests for me as an unexpected umami flavor on the finish, sauerkraut/soy, usually jarring. Came across it just now in a bottle of Fleurie that was lovely when I opened it yesterday. #wine #winefaults #winemaking
