Black bean & sweet potato soup. Not quiet as good as I remembered (no bad, just not very exciting), but well... I have three more portions to go, let's see whether the usual statement that soups and stews are better on the second day applies 😅

@vicgrinberg that lime or lemon juice will help?
@karhutar I actually had lime added this time - and now vaguely remembered that I left it out before. So yeah, the problem may be lime juice, just in the opposite sense 😅
@vicgrinberg I also make different bean or lentil soups all the time.. it’s fascinating how all (?) cultures add some acidic component to their legumes - the Spanish add vinegar to their lentejas, the Finns add mustard to their pea soup and so on
@vicgrinberg
Die Aussage stimmt! 🙂
Und, hau einfach noch Chili drüber.....
@vicgrinberg it looks tasty though. I can imagine it should have plenty of garlic, pepper and some paprika paste and sambal olek in it. And a bit of olive oil. Maybe some carrots and celeriac too. Tomato paste...
@vicgrinberg I wonder if you would enjoy peanut soup? I had it when I first moved to Atlanta. Hearty and flavorful. It was at a fancy restaurant, so I don't have the recipe, but I remember it seemed simple, straightforward, and very nourishing.
@kimlockhartga I know that we tried it once and weren't super excited - may not have been the best recipe, of course, since we are not experts in West African cuisines and just went with a random online recipe. Would try again in a restaurant...
@vicgrinberg my favourite solution to bland vegan dishes is soy sauce.
@renardboy it's not bland, it's just not as good as I remember 😅
@vicgrinberg the terms «soup» kinda scares me a bit as a fundamentalist of the «frijoles Negros». Not sure what recipe you followed, but a sofrito is a must: some olive oil, finely chopped onion, when translucent add some minced garlic, when fragrant (about 30 to 90 seconds) you start adding some aromatic herbs like oregano, a bit of cumin, then some chopped bell peppers. From here you can go Cuban, add white wine and a bit of tomato sauce, add to your «soup» and let it cook until thickens.
@vicgrinberg best if you let it rest, cold and reheat. More flavor guaranteed

@ojocle_olonam yeah, I do have a proper frijoles negroes recipe: https://mastodon.social/@vicgrinberg/115994825537138599

The above is a black bean and sweet potato soup, a different dish although also with black beans.

@vicgrinberg in my world there is only one way to eat frijoles Negros, i live near brazil now and they put meat and other stuff to black beans and feels weird 🙃.
In the caribbean where only sofrito is only added, the flavors are balanced with some sugar, to counter the bitterness, i can imagine the sweet potato will play well there.
