Back when I tried to progress from brothy soups to thicker ones, I think today's kohlrabi soup was the first of this variety.

Tangent: I've never seen the word kohlrabi in English. It also looks a bit weird, as Kohl is the German word for kale/cabbage. The only other translation I found is turnip cabbage, though. 😄

Main ingredients: kohlrabies, cauliflower, potatoes, carrots, peas, green beans, mushrooms, soy strips, black beans (and leftover tofu).

If this series will go on longer, you'll definitely see a bunch of returners over time, but this Sunday Soup was an all-time first: leek lentil soup.

It was inspired by a "leek lentils" dish that I used to make. It turned out to work very well as a soup, too. A few adjustments are to be made, but I've been very satisfied with this overall, but especially as a first try.

Main ingredients: red lentils, leeks, cauliflower, potatoes, carrots, peas, swai.

Black bean & sweet potato soup. Not quiet as good as I remembered (no bad, just not very exciting), but well... I have three more portions to go, let's see whether the usual statement that soups and stews are better on the second day applies 😅

Sunday Soup: Mexican-inspired sweet-potato soup.

This one includes soy granule(?) for a bit more chili-like texture while not really trying to be a chili. 😄

Main ingredients: sweet potatoes, regular potatoes, carrots, green beans, mushrooms, corn, kidney beans, onions, garlic.

I made this very bright green spinach soup today. I didn't put cream in it as I didn't have any, but it still tasted great. I also used olive oi instead of butter, and I used homemade chicken stock too. You can adapt it all to make it vegan or veggie #SundaySoup

Today's #SundaySoup (is this a hashtag? It's such a nice alliteration!) is the quick tomato soup by J. Kenji López-Alt. It is quick and it is yummy (buy the good tomatoes, add the whisky or vodka if you are OK with alcohol in food) and soul food for a rainy Sunday night.
