Feaster

Hosted Oma for an Easter meal and made a bunch of tasty elements, including the rolls which our kid proofed and baked entirely on their own!

The recipes relied heavily on some of our Sam go-tos:

• Brown Sugar and Mustard-Glazed Tofu
• Easy Roasted Carrots
• Vegan Deviled Potatoes
• Pea Pesto Pasta (this one is Minimalist Baker)
• Soft Vegan Dinner Rolls
• Vegan Lemon Loaf
• Vegan Chocolate Peanut Butter Eggs

Some of these like the tofu marinade and the lemon loaf we started last night. We had a little difficulty with the consistency of the peanut butter and the loaf icing for some reason. It was a lot to juggle, and we needed to break out the toaster oven at one point. I think we used almost every measuring cup and spoon.

I’m really pleased with how everything, especially the lemon loaf, turned out. We had leftovers for dinner… and probably will tomorrow too!
