Hasselbacked
Decided to switch up from one of our usual potato options and bake some hasselback potatoes, along with Sam’s tofu bacon bit recipe, both at 425° in our oven. I also steamed some broccoli.
I used our bamboo toaster tongs as spacers for slicing (I often see chopsticks recommended but they’re too thin for rounder yellow potatoes). I sprayed some avocado oil and dusted with a mixture of salt, pepper, and rosemary. I added a bit more oil halfway through baking at about the 20 minute mark. In hindsight I should have added the rosemary later, because it kinda burnt. Still came out very tasty!
