Last week I made J. Kenji Lopez-Alt’s Thai-Style Tofu with Green Beans and Red Curry Paste (Pad Prik King) recipe from The Wok.

It was a perfectly good pad prik king, but I think I will stick with Hot Thai Kitchen’s recipe. 4 stars ★★★★☆

Cooking tip:

I like tofu crispy, so I used to mix tofu cubes in a bowl with oil and cornstarch, and then fry them.

Recently I learned that you can also mix in the cornstarch with the oil in the pan, and then add the tofu cubes. They get just as crispy!

There is not much difference in time and effort, but it does mean that I have to use one bowl less. And that might not sound like a big deal, but to me it can actually make the difference in cooking the dish or not (depending on my mood, my energy level, etc.)

So I share it here and hope somebody else can benefit from this knowledge 😊

*Zu meiner Verteidigung: Ich konnte keinen Tofu kaufen. UND mein neurospicy Hirn sorgt dafür, dass mein Foodbesessenheitsfokus gerade darauf geschwenkt ist. Gibt Schlimmeres. 😬

@ralpho Tofu ist für mich eher ein Rohstoff. Rohes Fleisch schmeckt meist auch nicht. Es ist eine Frage der Verarbeitung. Da ist Phantasie und Können gefragt. China-Essen ist nicht unbedingt der Europäische Geschmack.
Mit leichtem Röst-Umami Aroma wird's z. B. interessant.
